Diet Beef and Pasta Soup

A simple vermicelli soup on meat broth is good for small children and for adults who want to lose weight. This dietary soup with meat and pasta is easy to prepare, and the cook's tips will make the children's soup tasty and low in calories.

Instructions

  1. Primary heat treatment. Rinse the bone with the meat. Place it in a pot of water and turn the heat up to maximum. Bring to a boil and hold for 2 minutes. Drain into the sink and rinse the scum off the pot with the meat.Tip: when boiling meat for a dietary soup, the first broth should be drained.

  2. Cooking the broth. Fill the pot holding the bone with filtered water and add salt once it boils. Cook over low heat for 1.5–2 hours. The cooking time depends on the size of the bone and the thickness of the meat. For the flesh, 40 minutes is enough. A strong broth from a marrow bone with tendons needs 6 hours of heat treatment.Tip: for small children, the optimal amount of salt for 3 litres is 1 teaspoon.

  3. Preparing the vegetables. Peel the vegetables. Cut the carrot and potato into small pieces. To remove excess starch, leave the chopped potato in cold water for 10 minutes, then rinse it before cooking.Tip: do not add a fried onion-and-carrot mix to dietary dishes. To keep the calorie content down, use fresh vegetables.

  4. Straining the broth. After 2 hours the broth is ready. Lift the bone with the meat onto a plate and let it cool. To remove any bone fragments, strain the broth into another container, rinse the pot, and pour the broth back in.Tip: to remove the fat completely, put the pot in the refrigerator overnight. All the fat will gather on top in light yellow clouds. Lift them off with a spoon.

  5. Cooking the soup. Add the vegetables to the hot broth and skim off any foam that forms. Cook until done. Readiness is easy to check on the potato – scoop out a couple of pieces with a spoon and press them with the blunt side of a knife blade. If they give way, the vegetables are ready. The cooked onion will turn transparent. You can either throw it away or blend it and return it to the soup.Tip: children do not like pieces of onion in the bowl. While cooking, use a whole onion – that way it is easier to take out.

  6. Adding the vermicelli and meat. By now the meat has cooled. Take it off the bone and chop it up. Vermicelli cooks in about 3 minutes. You do not have to wait for it to be ready – add the vermicelli and the meat, bring to a boil, and turn off the heat. Now is the perfect time to taste the dish and add more salt if you wish. If you have no vermicelli, you can replace it with ordinary pasta. This will lengthen the cooking by the time stated on the pasta packet.Tip: add garlic, spices, and herbs to the finished soup after turning off the heat.
