Halloween Snack "Vampire Eyes"

I make this "Vampire Eyes" Halloween snack every year, whenever I want to surprise guests with something unusual and on-theme. These are ordinary stuffed eggs, but decorated so that they look like the real eyes of a vampire or a witch.

Instructions

  1. I start by preparing the onion. You can use any kind – regular onion, shallots or spring onion. I prefer shallots, as they are more aromatic and sweeter once fried. I peel the bulbs, rinse them and cut them into small cubes.

  2. I heat a frying pan with vegetable oil and fry the onion until golden. I stir constantly so that it does not burn and browns evenly.

  3. I rinse the chicken eggs under running water and hard-boil them. To do this, I put them into cold water and cook for 10 minutes after the water comes to the boil.

  4. I cool the eggs in cold water, peel off the shells and cut them in half.

  5. I carefully remove the yolks from the egg-white halves and place them in a separate plate.

  6. I add the fried onion to the yolks – it gives the filling a sweetish aroma.

  7. I add a tablespoon of mayonnaise and mix thoroughly until smooth.

  8. I fill the egg-white halves with the yolk mixture, shaping small mounds above the surface – these will be the bases for the "eyes".

  9. I make the green mayonnaise. I finely chop a few feathers of green onion and grind them until they release their juice. I mix this with a little mayonnaise – the result is a bright green sauce.

  10. I coat the tops of the yolk filling with green mayonnaise. I cut the cherry tomatoes in half and set them cut side up into the centre of each "eye" – these are the pupils.

  11. I draw thin "bloody" veins on the whites around the pupils with ketchup – this makes the eyes look even scarier.

  12. I arrange the finished "vampire eyes" in pairs on a plate – it is best to choose dark or red dishware for atmosphere.

  13. For greater effect, you can add a decorative spider made from a cherry tomato and a prune – the body from a tomato half, and the legs cut from the prune. The scary Halloween snack is ready!

    For the green mayonnaise you can use not only green onion but also spinach juice or food colouring – the colour will come out brighter.

    Mash the yolks with a fork very thoroughly so that the filling is smooth, without lumps.

    It is easier to apply the ketchup veins with a toothpick – this way the lines come out thinner and neater.

Yes, the snack can be made 2–3 hours before serving and kept in the refrigerator under cling film. The ketchup veins are best drawn just before serving.

What can replace the cherry tomatoes for the pupils? +

Pitted black olives, pickled red pepper or pieces of red bell pepper will work.

How can I make eyes of different colours? +

Leave some of the mayonnaise white, colour some with green onion, and some with turmeric for a yellow shade. You will get multicoloured creepy eyes.

Why do the yolks turn green when boiled? +

This happens from overcooking. Boil the eggs for exactly 10 minutes and cool them straight away in cold water – the yolks will stay bright yellow.

Can I use a different sauce instead of mayonnaise? +

Yes, sour cream, Greek yoghurt or a mix of soft cream cheese with cream will work.
