Vegetable Stew with Cabbage and Potatoes
Instructions
Cover the dried mushrooms with hot water and leave them for 2–3 hours until fully swollen. During this time they will increase in volume and become soft.
Cut the swollen mushrooms into small pieces. Finely chop the onion. Fry the mushrooms with the onion in vegetable oil in a deep saute pan for 5–6 minutes.
Shred the cabbage into thin strips and add it to the saute pan with the mushrooms.
Add the tomato paste, salt and spices to taste. Stir and simmer for 15–20 minutes, until the cabbage settles a little.
Peel the potatoes and cut them into wedges or cubes. Add them to the cabbage and mushrooms.
Stir all the ingredients so that the potato is distributed evenly.
Pour in 100–150 ml of water – preferably hot, so as not to interrupt the temperature. Cover the saute pan with a lid and reduce the heat to the minimum. Simmer for 30–40 minutes, checking from time to time: the potato should pierce easily with a fork, and the cabbage should become soft while keeping its shape. If the liquid boils away too soon, top it up with 50 ml of water at a time. At the end, remove the lid and let the excess moisture evaporate.
Serve the stew hot, sprinkled with fresh parsley or dill. It goes wonderfully with a slice of dark bread and a spoonful of country-style sour cream. It is a hearty dish in its own right, but it also works well as a side dish for cutlets or chops.
