Rice with Chicken Fillet

Rice is a very filling side dish. It is usually served with sauces, gravies, fish or meat. Today I would like to share a recipe for a very economical way of making the sauce – one that is in no way inferior in flavour to more elaborate and expensive sauces.

Instructions

  1. Rinse 2 cups of long-grain parboiled rice under running water 4–5 times, until the water runs completely clear. Cover the rice with cold water so that it sits 3–4 cm above the grains and leave it to soak for 2–3 hours. Soaking removes excess starch and lets the rice turn out crumbly after cooking instead of clumping together.

  2. Peel and finely chop the garlic.

  3. Peel and grate the carrot on a medium grater.

  4. Cut the chicken fillet into small pieces. Drop them into a frying pan that has been preheated and greased with sunflower oil. Lightly fry.

  5. Add the grated carrot to the meat. Stir and fry. Then add the chopped garlic. Sauté until golden. Add a little water and cover the pan with a lid. Stew for 10 minutes.

  6. Pour clean cold water (four cups) into another pan. Put the rice in and place it on the stove. This is exactly how crumbly rice is made. Add salt and bring to the boil. Leave the rice over the heat until fully cooked. More ways to cook rice →

  7. Add 2 tablespoons of tomato paste to the meat and vegetables, stir thoroughly and carry on stewing over low heat for another 5–7 minutes. If the sauce is too thin, add 1 teaspoon of flour dissolved in 2 tablespoons of water – this prevents lumps from forming and gives the sauce the right thickness. Taste for salt and add more if needed. Pile the crumbly rice onto a plate and spoon the chicken and sauce over the top.You don't always have the time or the wish to stand at the stove for an hour and a half.     For a richer tomato flavour, add 1 tablespoon of ketchup or a couple of fresh tomatoes rubbed through a sieve.

Why does the rice turn out sticky? +

Most likely the rice was not rinsed enough or was not soaked. It is also important not to stir the rice while it cooks – stirring releases starch and makes the grains gluey.

Can the finished dish be frozen? +

The chicken sauce freezes very well for up to 2 months. It is better not to freeze the rice – cook it fresh when you reheat the dish.
