Apple smoothie with sweet potato and lemon
Instructions
I choose 2 ripe, medium-sized apples – sweet varieties (Fuji, Gala, Golden) or sweet-and-sour ones (Granny Smith for a little tang) work well for a smoothie. I wash the apples and peel them with a vegetable peeler – without the skin the smoothie has a smoother, more uniform texture. If you want to keep the maximum amount of fibre, leave the skin on, but then blend for longer. I remove the core and cut the apples into small pieces so the blender can handle them easily.
I repeat the procedure with the sweet potato – I peel it and cut it into small cubes about 2 cm in size. Sweet potato is denser than apple, so the smaller the pieces, the faster and better it blends. You can use sweet potato of any variety: orange (sweeter) or white (more neutral).
Place the apple pieces in the food processor bowl.
Add the segments of ripe sweet potato.
Add the lemon juice. It can be replaced only with freshly squeezed lime.
Pour in the boiled liquid.
I switch the blender to maximum power and blend all the ingredients for 1–2 minutes until completely smooth and velvety. Sweet potato is denser than apple, so it needs longer blending. If the smoothie comes out too thick, I add another 30–50 ml of water and blend again. For a drinkable consistency you need about 200 ml of liquid; for a spoonable consistency, 100–120 ml. I taste it and, if needed, add honey or dates for sweetness. I serve it straight away – in the open air an apple smoothie quickly oxidises and darkens.

For a sweeter smoothie, use an orange variety of sweet potato – it is sweeter than the white kind and contains more beta-carotene.

Add a pinch of cinnamon or ginger – they go beautifully with apple and enhance the warming effect.

For a creamy texture, replace part of the water with coconut milk or natural yogurt.
FAQ
Do I need to cook the sweet potato before making the smoothie? +
No, raw sweet potato blends perfectly in a powerful blender (from 1000 W). If your blender is weaker, bake the sweet potato in the oven for 25–30 minutes at 180°C – this will also add a caramel note.
Can I make the smoothie ahead? +
The smoothie is best drunk freshly made. You can keep it in the fridge for up to 6 hours in a sealed jar filled to the top (to minimise contact with air), but the taste and colour will change.
What can I use instead of sweet potato? +
Pumpkin or carrot – they give a similar consistency and sweetness. The proportions are the same.
